I know there are tons of vegan cheese sauce recipes out there, but most of them contain cashews + many more ingredients and require longer preparation time. This cashew-free cheese sauce contains only a handful of ingredients and is ready in 3 minutes.
This recipe is not only amazing for vegans. I served it also to vegetarians and meat eaters and everyone loved the taste AND texture of this vegan cheese sauce. The tapioca flour (which is also called tapioca starch) makes this recipe so special because it adds the amazing elasticity to the sauce. It makes the sauce stretchy and even reminds of real cheese. Nutritional yeast is an important ingredient for the taste because it adds a cheesy flavor. The spices are up to you, but I love to add some garlic and onion powder, and also a pinch of smoked paprika.
You can use this vegan sauce for any savory recipe which requires cheese. Whether it is pizza, nachos, gratin, pasta, or any other plant-based recipe. Sometimes when I am too lazy to make my Mac and Cheese recipe I will simply make this 3-minute cheese sauce and pour it over my cooked pasta and my dinner is served in just a few minutes. I have made this awesome vegan cheese sauce quite a few times now. We like to make vegan "cheese steak" sandwiches. We make the "meat" using soy curls and a bunch of umami flavorings in a pan with grilled onions. Then we load the "meat" onto a 6" Hero roll and apply a generous amount of this cheese sauce. It is fantastic. An interesting note is that today, I added the juice of an entire lemon to the sauce, about double what the recipe recommends, and the extra tang was beneficial. I have tried many plant based sauce recipes, most were bland, some downright disgusting. THIS is PERFECT! I've had it on salad, baked potatoes, as a dip for tortilla chips and vegetables and last night I used it in place of yoghurt with my curry. There's a teeny bit left. There are some leftover mashed potatoes and cooked Kale in the fridge. Think I'll mix them up and air fry them and maybe put some tobasco in your sauce. For the best flavour I'd recommend sticking with the nutritional yeast. Most vegan cheeses don't have much flavour. Nutritional yeast gives this recipe a delicious savoury, seasoned flavour and there really isn't anything else that gives a similar effect. Hope that helps!
Smoked paprika has a totally different flavour to regular paprika and really adds something to this cashew cheese sauce. I have never tried it with regular paprika. I think it would be ok though or you could just omit it completely. I've made it without when I've run out.

I am not vegan but love eating healthy. This is excellent! I make my own almond milk so I used that. I left out the jalapeƱos so I could use it in various recipes. Hi Kevin! As I have mentioned a few times, the nuts really are the key to a true creamy cheesy result. That being said I have had people make it without and enjoy it. If you look through the comments you can find a few ideas. My suggestion is to replace with a combo of things. I do use white beans in a few of my sauce recipes (however they also have cashews) so they are a good sub but I would be careful of using too many as it can become more hummus like. If you want to keep this very low fat, and not use any nuts or seeds, then maybe try the white beans, or a combo of that, a touch more potato and some cauliflower. You may have to adjust the other flavorings to get the end result you're looking for. Some people have also used sunflower seeds! Let me know what you do and how it turns out!

I usually make it exactly by the recipe but today I used it as the base for Broccoli "Cheese" soup (by thinning it out quite a bit) with caramelized shallots and YUM!
